Resulting from the processing of pasteurized sheep's milk, with the addition of calf rennet and milk's ferments, the curd derived gets collected in special molds undergoing to a dry salting process in special environments that allow the secondary syneresis and a first maturation. During the production phase, the Chianti wine is added. The product thus obtained is destinated to subsequent processing.
