The seasoning in the cave is an ancient practice of widespread cheese ripening before the introduction of refrigeration techniques in the Maremma area and high Lazio area, inspired by the numerous natural cavities in the mountain made of "tufo". The caves were protecting the cheese from heat and at the same time with their microclimate shaping the taste and texture. We therefore wanted to revive this tradition of the territory by carrying out the ripening of some pecorino in our Valentano cave, where the special temperature and humidity conditions give the cheese a unique flavor, a gift from the past.
