The Protected Designation of Origin for the Tuscan Pecorino was created to guarantee the consumer the excellence of raw materials and production processes through their connection with the territory. All stages of production of Tuscan Pecorino are made exclusively only in Tuscany and in some towns of Umbria and Lazio, starting from breeding of sheep that are fed mainly with green forage and hay from natural pasture of the area. Modern production technologies fused with the respect of a ancient tradition , give rise to a unique cheese, not replicable outside its production area, and we, the ones from Rocca Toscana Formaggi are proud to be among the members of the Consortium dairies for the Protection of Pecorino Toscano DOP, which guarantees the quality of the product under his unmistakable mark.
